The lines in configure.in which generate the lines of fat.h in question are:

But I've done a search through the whole of MPIR and no such functions exist.

I think this might be a make distclean problem. Once you have already
done ./configure --enable-fat, files appear in the mpn directory
containing the bad function names and I suspect that a subsequent
./configure --enable-fat picks these up. Neither make clean nor make
distclean gets rid of the files. Looks to me like a preexisting bug in
GMP, though I wouldn't rule out us screwing something up somewhere
that is nonobvious.

At any rate, if you remove the .asm files in /mpn probably it will work for you.
