I think this points to the need for a co-op. Co-ops seem capable of surviving on smaller footprints than do most for-profit operations. I know there is an effort underway to get a co-op in NE Minneapolis. Maybe someone could work on getting a co-op started for the area that Kowalski's on Nicollet now serves.
