Blue is color of voice 1.
Together with the 3 other colors for voice 2,3,4 it's defined in MScore::
selectColor[]

These colors used to be easily configurable in MuseScore 1.x It's not the
case anymore for two main reasons.
1/ We needed real estate in the preferences dialog
2/ Having the same color makes support easier.
Still the colors are customizable if you edit the main preference file of
MuseScore under the keys selectColor1 etc...
The default color choice has been made after a lot of back and forth, so I
would not change it except if there are really strong arguments against
them.
