But what you can't do at the moment is create notes for more than the next due task occurrence (which may not be an issue in this case).

I assume that you have unchecked the checkbox "Do not create a completed copy of this task on recurring". This checkbox is located in Advanced Options under Task Recurrence. With this checkbox unchecked, everytime you complete this recurring task, a copy of the old task is made for you. Everytime the task recurs, just delete the note, and start your new note for the next meeting. To test this I did the following; I created a daily recurring task. I typed in the Note section the day of the week (i.e. Monday). I then completed the task. I now have a copy of the completed task and a new uncompleted task, with Monday in Notes for both tasks. I delete the note in the new uncompleted and replace it with "Tuesday". When I complete this recurring task, I will just delete the note in the new uncompleted task, and type in "Wednesday" in that note. And so on and so on.... In this way, you will have a historical record of your notes for each meeting with unique notes for each meeting.
