Yeah- I am thinking dual P3-866 on an Asus board (CUV4X-D), 2GB of RAM, striped 18.1GB 7200RPM drives (U160) Linux 2.2.x is probably the way I'm thinking. Seems to be a nice stable place to go for a good locked down server. Of course, nobody is getting shells on it or anything, so it's strictly MySQL and PGSQL.
