The easiest way is to have a GC Savings account.  Each week, balance your
gift certificate balance and add in sales and subtract ones that were
redeemed.  You then either fund your savings account or transfer money to
your checking account.  This not only allows you to earn interest on this
money, it keeps you from accidently spending the money and it protects you
if you get robbed, have a fire or a natural disaster.  Even if you have a
safe, they can be stolen and they, and the contents can be damaged in a
natural disaster.
