The vacuums that are made in the world of cryo receivers are made with a turbo pump (very expensive but fast) backed by a scroll pump, but a diaphragm pump might be able to do the job. There's also the old Welch pumps, but they're very heavy.
Vacuum gauges are made by Varian. There's a panel meter and a little metal gizmo with an octal base like an old vacuum tube. Look on ebay.
Beyond that, I can't help.
