The answer is in your last couple of lines in that you need a switch to
change over between 2 (or could be more) 'sources'.
A 2 pole 'toggle' switch per channel would do it or you could get more
fancy solutions. If you have a patchfield available you could 'normal'
one instrument and 'overpatch' when you want the second. you can only
really have 1 source into each channel input at a time. Patching has an
advantage that you can pick your 'alternate' sources without
restriction, but the switch method would be quicker.
There would be other 'custom mods' you could do to your desk but this
gets very much more involved.
