You can swap over NFS just fine.
You can't use cachefs if you don't have any local disk. The whole point of cachefs is to use local disk to cache what is on the network. However these days the network is often quicker to access than local disk anyway and with modern network switching you don't have the contention problems on the networks that were present when cachefs was designed and implemented.
