I copied most of the folders and files (not all) from a backup of my old 
/home partiton to the new one.  I suppose there's no way of telling whether I 
copied one that I shouldn't, or failed to copy one that I should have.

I use a mix of both.  Some things are easier done by editing config files, 
but the problem often is that you don't know which file or where it is.  The 
gui tools help to do the job, but don't help the learning.
