In  Postfix you can define aliases.
Edit the file /etc/postfix/aliases
It is required that root should have an alias so that any mail that arrives 
for an unknown user will go to root, and will be forwarded to a real user.

After editing the file run
postalias /etc/postfix/aliases
to create the alias database.

As usual there is lots of useful info in the config files especially 
/etc/postfix/main.cf

If you are using fetchmail, it is also possible to define the local user a 
remote account belongs to.
