I generally try to stick to plain text for everything, but there are times when an HTML message is more appropriate. The only way I've been able to find to change my composition format is under my account settings for "Composition and Addressing", but this is awfully cumbersome.

Its under options>format for me at the moment... Try re-installing. Or have a look in tools>options, then click on composition, see if anything look untoward here.
