If you want to run your own mail server, then you may want to use
Postfix. It is probably already installed. It does the same job as
Sendmail, but is the comfiguration is simpler. There are other options
for a SMTP server, and I will let others tell you about their preffered
ones. One thing to keep im mind - if you are going to run your own mail
server, you should have the system running 24/7. If the system is down,
people will get timeout errors when sending you mail. On the other hand,
running your own mail server gives you a lot more control over your
mail. You can do a lot more drastic filtering then your ISP can, because
you know who you want to get mail from. If you want to block an entire
net block because the only mail you are lickly to get from them is SPAM,
you can do it. (It is great to be able to block SPAM BEFORE it gets into
your mail server, instead of having to filter it out afterwards.)

I am a bit rusty, but I have set up Sendmail and Postfix servers. For a
basic setup, they are not too hard. Qmail is also susposed to be fairly
easy setup.
