If you press Ctrl-F in JOSM, then you get a search dialog. Type in "oneway:yes" (without the quotes) and press enter. This selects all oneway streets, so you see their arrows. Click on whichever street you want to edit now. Next time you press Ctrl-F, it will remember what you typed the last time.
