the mappaint meanwhile is included in JOSM, so I do not know if it is still possible to run (and configure) it as a plugin (as we did before the integration). There's nothing special on the Mac, except that the Mac hides a lot of stuff from you. To open your josm config folder, choose the go to menu in finder, select open folder and type in something weird like ~/.josm and press enter. The finder now should open and display the ~/.josm folder as what it is: Just an ordinary folder :) .
