Taginfo suggests "stepover" and "squeezer" respectively - see http://taginfo.openstreetmap.org/keys/stile#values . A number of those will have been tagged by me though - back in 2008 someone said they had problems getting their dog over some stiles and it'd be useful to know more details about them.

Yes, it's reasonable. Another approach sometimes taken is:

barrier=stile
barrier:style=squeeze
barrier:material=wood
I'm not seeing much for those?
