Make install just copies the files in.  You could do a make install
again, make a list of the files it installed, and then remove them.

That's what packages are for.  Gentoo is nice because it does a make
install but keeps track of which files are installed.  It's the closest
thing to a normal source install that you'll see in any package manager.

In any case, it's best to install software from packages when possible
so that problem doesn't come up later.
