Maybe I'm misunderstanding what removing baffles is.  My guess is your removing 
pretty much the inside of the mufflers.  There is the tube with all the holes 
in it and a ring to support it.  Some might be offset tubes.  But basically I'm 
thinking it becomes a open megaphone if you remove the baffles?   This will 
lean a bike out.  

I've purchased bikes over the years with aftermarket exhaust.  They never run 
right for me, I ended up putting stock systems back on a few, even traded a 
good aftermarket for a rough looking stock to quiet it down and make it run 
nice.  

Also I'm all highway, and that droning constant sound just eats at you.  I've 
tried my hand at jetting and can say I suck at it.  Never got them to dial in, 
which in turn makes me give up.  

Maybe I'm just getting old, but research and trying will be the only way to 
find out if you and the bike will be happy with the results.
