CHICKEN IN PANDANUS LEAVES         Ingredients 

Boneless chicken thighs, 1 cm cubes 600 grams
Pandanus leaves 20
Oil to deep fry

Marinade 

Garlic, finely chopped 4 cloves
Oyster sauce 2 tablespoons
Dark soy sauce 3 tablespoons
Sugar 1 teaspoon
Fresh coriander leaves, finely chopped 2 tablespoons
Sauce
Dark soy sauce 2 tablespoons
Sugar 4 tablespoons
White vinegar ½ cup
Sesame oil 2 teaspoons
White sesame seeds, roasted 1
 tablespoon

Method

1.
Mix together garlic, oyster sauce, dark soy sauce, sugar and coriander
leaves. Add boneless chicken thigh cubes. Let it marinate for at least
three hours in the refrigerator.
2. Take a pandanu leaf. Roll a chicken piece in it and tie tightly. Repeat the 
process with the remaining chicken pieces. 
3.
Heat sufficient oil in a deep pan and deep-fry the chicken packets for
one to one and a half minutes on medium heat. While serving do not take
out the chicken pieces from the leaves.
4. For sauce, mix together dark soy sauce, sugar, vinegar, sesame oil and 
roasted sesame seeds well in a bowl.
5. While eating unwrap the chicken pieces, dip in this sauce and eat.
