 *BAIDA ROTI

*Ingredients

For the roti
Refined flour (maida) 1 cup Salt to taste Oil 1 tablespoon Baking powder 1/8
teaspoon Egg 1

For the filling
Eggs 8 Oil 1 tablespoon + for frying Onion, minced 1 medium Minced mutton
(keema) 1 cup Green chillies, chopped  2 Salt to taste Garam masala powder ¼
teaspoon Fresh coriander leaves, chopped 1 tablespoon

*Method*

1.Add salt, oil, baking powder and egg to the refined flour and mix well.
Add one fourth cup water to knead into a soft dough.

2.Divide into four equal portions and roll into round balls.  Keep the dough
covered with a damp cloth.

3.For the filling heat one tablespoon oil, add onion and sauté till light
brown.  Add minced mutton, green chillies and salt and cook on medium heat
till the mince is cooked and completely dry.  Add garam masala powder and
coriander leaves and mix well.

4.Beat the eggs well.

5.Roll out each ball of the dough into an eight-inch square chapati.

6.Heat a non-stick pan and place the chapati on it.  Place some mince masala
in the center and pour two tablespoons of beaten egg over.  Fold in the
sides to make a square packet.

7.Pour some more beaten egg over and drizzle oil.  Slowly turn over and pour
a little more of the beaten egg so that the dough-mince packet is covered
with egg on all sides.

8.Gently fry on low heat till all the sides are golden and crisp.

9.Serve hot with green chutney.
