*Ingredients
*Spinach leaves........  10
Tomatoes ........ 2
Mushroom ........ 5
Zucchini ........ 2
Spring onion ........ 4
Aubergine/egg plant ........ 3
Okra/ lady finger ........ 5
Red capsicum ........ 1
Yellow capsicum ........ 1
Green capsicum ........ 1
Chat masala ........ 15 gms
Olive oil ........ 15 ml

*Method*
• De-seed the capsicums and cut into quarters.

• Cut " thick slices of zucchini,tomatoes and aubergine.

• Cut mushrooms and okra into half lengthwise.

• Clean the spinach leaves.

• Cut the bottom part of spring onion till 4 inches and slit.

• Add olive oil to the iron griddle and place the vegetables on it and cook
till it gets a little charred look, add tomatoes at the end.

• Sprinkle lemon juice and chat masala on top and serve hot.

*Note:* • Vegetables could be added as per your choice.

• This recipe is very nourishing, tasty and a gift for health conscious
guests.
