Soy Beans, in Olive Oil
 






In the heat of the summer, there is a tradition in Turkey to eat cold meals. 
All these meals are made with olive oil, hence usually called “main 
ingredient in olive oil”

It is very common to make green beans, kidney beans in olive oil. The first 
time I tried this recipe, it was during my university years, in Ankara. Since 
then I prefer it to the kidney bean version.

The recipe is quite easy, and here it goes:

Ingredients:

1 cup dry soy beans 
1 medium size onion, chopped 
2 carrots, peeled and chopped 
3 Tbs olive oil 
salt, sugar 
Steps

Put the soy beans in a large bowl and cover them with water. Wait at least 4 
hours for them to swallow. If you could change the water every now and then, it 
would be good, if not; no worries. Once they are ready, continue with the rest 
of the recipe: 
Cook the onions in olive oil, do not brown them, just cook 
Add the carrots, and fry them a bit 
Drain the soy beans and add to the pot 
Put enough water to cover 
Add 2tsp sugar and salt to taste, stir and cover. Lower the heat and let 
cook 
After about 30mins, check if the carrots are cooked. If so, the meal is 
ready! 
Don’t forget to serve with rice and yogurt! Bon Apetit.
