*BURRITOS*

*Ingredients*

Whole wheat tortillas     4
Kidney beans (rajma), boiled and coarsely ground 1 cup
Mexican rice      1 cup
Deep fried potato wedges    8
Cream cheese       1 cup
Iceberg lettuce      a few leaves
Cheese, grated      1 cup
Salsa fresca      1 cup
Jalapeno peppers, sliced    2

*Method*

1. Heat a tortilla lightly on a hot tawa.  Place it on a work top over a
piece of aluminum foil.
2. Spread coarsely ground kidney beans.  Over that spread a layer of Mexican
rice. Over this place a few deep-fried potato wedges.  Put a few dollops of
cream cheese.  Tear a few lettuce leaves and place them over the rest of the
layers.
3. Sprinkle grated cheese and salsa fresca and jalapeno slices.
4. Roll it along with the aluminium foil. Twist the ends.  Cut diagonally in
the centre and serve.
5. Similarly make the remaining burritos.
