PUDINA PANEER 
   
  Ingredients
   
  Freshmint leaves: 5-6 sprigs Cottage cheese (paneer), ½ inch triangles: 
250grams Oil: 1 tablespoon Black cardamoms:  2 Green cardamoms : 4Cloves : 6 
Black peppercorns: 8 Cinnamon: 1-inch stick 
Green chillies, broken:   3-4 
  Onions, grated :   

  2 medium 
  Poppy seed paste (khuskhus) : 
  2 tablespoons 
  Salt : 
to taste   Fresh cream : 
  2 tablespoons 

  Method 
  1. Heat oil in a pan. Add black cardamoms, green cardamoms, cloves, black 
peppercorns and cinnamon and sauté. 
2. Add broken green chillies, grated onions and continue to sauté till the 
onions brown lightly.
3. Tieup the mint sprigs together and add to the pan.  Bruise the 
leaveslightly, add one and a half cups of water and mix.  Add poppy seedpaste 
and mix.  Add salt and bring the gravy to a boil. Let it simmerfor three to 
four minutes.
4. Take the mint sprigs out and add thepaneer triangles.  Mix with a light hand 
and cook for three to fourminutes or till the paneer triangles are heated 
through.
5. Add fresh cream and take it off the heat.
6. Serve hot.
