Probably not very helpful right now, as you're looking for a quick
solution to your jack issue before the walls go up in the near future,
but the absolute best way to deal with the cat5 vs cat6 vs fiber
decision is to simply run conduit in the walls rather than one
specific cable type. This is essentially PVC tubing in the walls and
allows you to change the cable in the future as needed.

Depending on your needs, you can run half-inch or 1in to most rooms
and then something larger like 2in into the server room/office. I have
yet to see someone anticipate their future needs perfectly, and
tearing into the walls is generally something you'd like to avoid,
right?

Conduit is also a great solution to the home A/V distribution issue
that many people are looking into with new home construction these
days. My home in Memphis has whole-house audio which is great, but the
original owners didn't run conduit and now a few speakers are giving
me issues lately (15-20 year old home), and it is virtually impossible
to replace the wiring. I believe the speaker wiring has simply
oxidized somewhere but cannot easily (or inexpensively) do anything
about it.
