In which case I would ask if they need to be able to send email as a part of
the requirement so that you can implement an appropriate solution and move
forward accordingly. If they only need to receive email, the forward does that
while "restricting them to only email access" as requested. :)
You can also always go the route of restricting logins to a specific machine
using the "Log On To" setting in AD and just pick a bogus machine name so that
it doesn't exist. I don't believe that would stop them from accessing share
data if they tried to map shares however.

That said, I have to question why they would want to continue providing access
to email. If there is some reason this person might legitimately need to
continue receiving these emails, I'd create a new contact and just forward
email to whatever external address they choose rather than actively allowing
them to continue full send/receive functionality.

Our remote sessions are VPN controlled. Webmail access however is not. I
would just remove the user from VPN permissions.
