most of the time, the mac mini with server is configured with two harddrives for raid1. this is why it doesn't have room for an optical drive.

I don’t know the difference between Mac OS server or client. As far as running this “Server OS” as a client, I don’t consider something that has “Chat with your friends” or “make a video call” or “Photo booth” on the desktop really a server OS. Or maybe I’m old school to think the only things you should be doing at a server is managing functionality and security and not sit at it like it’s your PC and surf the web, etc.

Matt, what will I need the 2^nd HDD for? I have this thing to be able to manage other Mac’s, I can leverage my current Windows/SAN storage for everything still yes…or no?

My main computers is a Mac Mini. I love this little thing. It's quite the great piece of hardware.

I have it running a VM of Windows 7, and I do my windows stuff on that. It'd dedicated to a second screen.

You got the server, so no DVD drive. Did you get it with a second HD? If not, you may want to consider adding one. (There is space in there for a second 2.5" drive.
