I used SCVMM for my SBS P2V "swing". Talk about painless...point, click, let 'er rip, reassign the original IP's to the "new" NIC. I almost had to pinch myself during the testing because it was too easy.
IIRC the only semi-special thing I did was power down the 2nd DC before doing the P2V.
