So it sounds like a regular pc built up with good amount of ram and multiple spindles will do the trick with a dual core i5 or i7?

For what I presume his purposes are (home lab, learning, testing, etc.), I would recommend a bunch of RAM and to not worry too much about disk I/O, RAID or CPU power. A regular PC with 12GB or 16GB RAM, an i5 or i7 CPU, and a decent SATA hard drive ought to do nicely for mucking about with the new toys from Microsoft. Also, why limit yourself to ESXi.
