This doesn't strike me as a problem virtualization can solve, as stated. As recommended, this is more of a Citrix or Terminal services issue and whether you can do what you want is going to be governed by whether or not the POS is capable of running concurrently in different sessions. This really should not be an issue, but you should be sure that the POS software can do it in a Citrix or Terminal services environment.
