I have Sharepoint and it's SQL server both in VMWare.  Have had it on VMWare
for years, no issues.  We do have the SQL server on a different VM guest
machine (it's used for more than just the Sharepoint DB).  Would I do it
again, sure, it's been very stable.

Would recommend a good book or hands on class.  I went to a hands on 3 day
admin class a couple of years after implementing Sharepoint and it was very
useful.  I would not recommend allowing users the ability to create sites
and most users need nothing more than Web-Developer permission level.
