The sbs2003->2008 migration is a hard slog. Do lots of preparation and check that everything is really running smoothly first. I had problems with DNS and ended up stripping off all my member servers and sites to simplify things.
Also bring all the mailboxes down in size. If necessary archive them of and put them back later, but let the migration run on minimal storage size - and turn the AV OFF for the mailboxes - watching 200,000 emails come through at 1 per second is not fun!! For me Exchange was the steepest learning curve, but the pop pickup really comes into its own while you migrate and sort you IP issues. Changes to things like catch-alls to a bit of time to work on - but I know of an MVP's blog with a few hints (see below!!)
