For some reason I was thinking that I had installed more than one NIC on a previous installation of Ubuntu, but I can't recall entirely. I'd also recommend trying FreeBSD, Fedora, and Debian.
You might try running 'sudo apt-get install ubuntu-desktop' (or a similar command) on your server install, that's always rendered good GUI results for me on server installs. Greetings! I am trying to set up a machine to run Wireshark fairly continuously. I'd like to use a linux system for this. I want a GUI, Wireshark, and a web browser (so I can mail myself logs via GMail). It also needs to support two NICs (one for monitoring, one for internet connections). So far, I've tried Ubuntu Workstation (nice GUI, Wireshark, and Firefox). However, it only supports one NIC. Ubuntu Server is a bit too tricky for me to install and have the GUI running. (After jumping through many hoops, and NOT seeing the ability to bring up in, I believe it's called Run Level 5, I'm stumped - too many years have gone by.)
