I looked into the auditing, but there didn't appear to be a way to audit the deletion of a printer. :(
I'll look into the psloggedon app, but the problem is that it will most likely give me the option of about 100 teachers & 100's of students... I think you can actually turn on printer auditing for certain groups through the Security | Advanced tab in Printer Properties, I would enable this for the users that have access.
