I backup with robocopy /mir. I keep a history of backups to go back to if a user inadvertently deletes something and realizes it within the rotation window (two weeks). I want deletes to take, when a user deletes a file, I want it deleted from a backup as soon as the user deletes it. Of course, this comes from knowing the user base. When a file is deleted here, there's some thought given behind deleting it.
