We've used WDS in the past for Windows XP and will be trying this for Windows 7 this week. At some point we'll be going to VDI, but at the moment we're in the process of finishing a Windows 7 migration.

There may be some gotchas so look it up. Personally I use VMWare templates but you don't sound like a VDI environment.
