If you have a capable Drupal developer, starting with 7 should not be
problematic. The major modules are already available in 7 format, and
the ones you really need which aren't wouldn't be so hard to convert
by such a person.

So it depends on who is doing the work. I would say most of the good
modules are available for 7 or are available in reasonably good
alpha/beta form.
