The most common pattern is probably a REST or HTTP API on the server, usually exposing JSON (or XML) with HTTP Authentication or OAuth. Most frameworks will make exposing resources using a REST or HTTP interface straightforward. In many cases a useful app can be just using HTTP GET to fetch a resource, and the "heavy lifting" is done on the server, leaving the mobile with a minimal amount to do.
