It seems I got what they mean. "Adjective" is not to be understood
literally, but rather in a "modifier" sense, that is, adjectives are often
modifiers to some noun. And in this sense NNPs often modify some noun too.

I would follow the "Apache Xerces XML library" example they've given there:

The Apache OpenNLP library is a machine learning based toolkit for the
processing of natural language text.

Here "The Apache OpenNLP library" includes "OpenNLP" as a modifier to
library, that is, "OpenNLP" functions as an adjective.
