We use some of the ``desktop'' applications, but generally only those that are useful for development and debugging work. Many times I build something (e.g. xv) on a server because it's not in the vendor's distribution. Another factor for me and most of our clients is that we generally use Macs with OS X for desktop applications, largely because I don't want to spend the time dealing with getting the correct bits and pieces together to do desktop things on Linux (much less getting them working on FreeBSD or other platforms).
