It should be possible to boot the opensolaris livecd and select the usb stick as the target disk for installation in the gui installer. A known problem is that you can't connect the usb stick to a different usb port on the same machine, or connect the usb stick to another machine, and boot opensolaris from the usb stick. zfs won't be able to mount the zfs root filesystem. (Work around is to boot the livecd, and zpool import -f rpool the usb stick on the new machine / new usb port).
