I agree. That's why I think Xroller will be important... The current CVS for Hibernate 2.0 has some new Ant tasks to do the same plus build update scripts for upgrading a database between versions, etc. so I'll probably move to that when the next Beta release comes out (Beta4). If you look at the domain stuff though, it's all Hibernate, and the unit tests use Hibernates ability to create the scripts to build the database to create an in-memory HSQLDB database to test against.
