Simply leaving out the MAC address does not work for multiple wifi devices. Newer OpenWrt versions put the device path in the wifi sections instead of the MAC address. However, a much more reliable way of preconfiguring devices is putting scripts into /etc/uci-defaults that use uci commands to change the existing config files. That way you avoid all these issues entirely.
