Nah. We have only about 20 servers.

But in total Ops will monitor about 150 hosts (servers -20 , routers - 30, 
switches - 45, APs – 45)

Right now it monitors about 90 hosts and runs on a standard double-core PC 
(Dell Optiplex 330). DB is not separated.

And its running quite well.

So I’m considering giving it two  dedicated cores, 1-2 GB of RAM, real/virtual 
interface and enough disk space

If you have a large facility (200+ servers), VM is not interesting due to CPU 
costs, it may leave few cycles only to other VMs. 
We have a dedicated mysql server for nagios that run in esx3.5 like a charm on 
the other side

Network is not a bottleneck in any case

Most will throw up theur hands in horror but I'm using the VM as a
production server.
At least I'm in the process of migrating to it and intend to stay on the
VM.

Reasons?

The usual VM reasons, reduced HW cost, Quick DR(bring up VM on another
box), snapshots etc
