So in my script I would just have PAGER as the variable for the
sms_notification script, and for my contact I make sure that the default
notification has sms enabled, and for the individual contact I would put
in the pager name or number in the Mobile field?
Is that correct?

You need to add PAGER to the notification method's contact variables
field.
This states that the PAGER field is required for this notification
method to work, so Opsview will display the mobile field in the
contact's notification tab. The config generation will also take this
list and ensures it gets added to the contact definition (a warning
will happen at reload time if a contact doesn't have all the required
contact variables set based on the notification methods they are
assigned).
I've updated the documentation at

say:
"This is a comma separated list of variables that the notification
method requires for each contact."
Or do you have another suggestion to make it clearer?
