What I am not sure about is the uncommitted field. I seem to remember that this is used by Opsview to find if there are changes since the last reload and warns that a reload is needed for the changes to take effect. What I cannot remember is whether or not this is required for the config to be regenerated.

The uncommitted field is only used by the UI to mark what has been changed by the UI since the last reload (so changed rows can be highlighted).  It is not currently used during configuration generation (except at the end of a successful generation process when the flag is reset).  This may change at some point in the future, though.

Also am I missing out anything/risking breaking anything major by updating the checks this way?

Yes, there is always a risk in working directly on the db so always make sure you have backed up the opsview database before trying anything like this just in case it all goes a bit awry.  Use something similar to the following:

  db_opsview db_backup | gzip -9 -c > $HOME/db_opsview.$(date '+%Y%m%d%H%M%S').sql.gz
