I'm not sure if there are any command line type utilities that you can get
to do this on Win2K (something like the NT Resource kit?), but you can pipe
these metrics to a log file using the "performance" tool, that is available
under the "Administrative Tools" program menu..

Open up "Performance", and double click on "Performance Logs and Alerts",
then right click on "Counter Logs". Select "New Log Settings", give it a
name and then define/add the counters that you would like to collect for
memory and processor.. Under the "log Files" tab, change the file type to
something like a CSV, and away you go.. You can break the log files down by
day as well if need be..

I run sar 10 3600 >> /var/sun/cpuusage.log to monitor the performance
between peak hours ,,, I have 16 Windows 2000 APPLICATION servers running
citrix and some seem to be giving poorer performance than others: If I can
monitor CPU and Memory and pipe it to a batch file, as I do in UNIX, it
will be a great help: Can this be done ?
