Take any tool that does compare schema, trace it, and put a wrapper that will activate the script for all schemas in the database.
If you have TOAD you can easily capture the sql via spool sql to file (or screen).
 
For your side note: restore a backup to the test system.
If you need only the structure use the DataBee tool to copy the structure from prod to test.

ALSO - on a side note, is there an 'easy' way of duplicating a PRODUCTION database over to test, without copying the db files?
