Yes, I discovered after sending my message that I could edit theme.xsl to remove the cols=20 default on textareas and then on xforms:textarea add xhtml:cols and xhtml:rows to get the sizes I wanted.

You can add your own attributes on XForms elements, but they must be in a namespace other than xforms (http://www.w3.org/2002/xforms) or xxforms (http://orbeon.org/oxf/xml/xforms). In the examples we use xhtml:class="..." which is automatically copied on the generated HTML element.
