Charlesproxy shows you quite a lot of info about stuff being
transferred.  Not sure if it shows file uploads though.

You could try wireshark (I haven't used it extensively but heard good
things about it).

 

I've also used YATT (http://www.pocketsoap.com/YATT/) for debugging
stuff that doesn't show up in httpwatch / httpfox, such as FileReference
uploads. Not the most polished UI and a bit rough, but it does the job.
