Charlesproxy shows you quite a lot of info about stuff being transferred. Not sure if it shows file uploads though.

I've also used YATT (http://www.pocketsoap.com/YATT/) for debugging stuff that doesn't show up in httpwatch / httpfox, such as FileReference uploads.
